Another Day in Paradise


We went down to the Fairhope Pier this week at sunset! Took this picture, what a beautiful place. We now know why everyone in Fairhope seems so happy. Who wouldn't be happy when you get to see this view every afternoon. I know it seems like I bragging, but I just can't believe we get to call this amazing place home!

Desires of Your Heart

It has been 7 weeks since we moved to this beautiful place! I am still in awe that we actually live here.

"Delight yourself in the Lord and he will give you the desires of your heart" Psalms 37:4. This scripture has become more real to us in the last few months than ever before. We are so grateful to God for his love for us!

Lemon Chicken Pasta


The Shores' favorite summertime meal ~


Lemon Chicken Pasta

  • Kosher salt
  • 1 lb. of grilled chicken strips (I purchase pre cooked packages)
  • 8 cups broccoli florets (4 heads)
  • 1 box of bow tie pasta
  • 5 tablespoons good olive oil
  • 5 Roma Tomatoes
  • 2 lemon, zested and juice
  • Freshly grated Parmesan,

Directions

Cook the broccoli for 3 minutes in a large pot of boiling salted water. Remove the broccoli from the water with a slotted spoon or sieve. Place in a large bowl and set aside.

In the same water, cook the bow-tie pasta according to the package directions, about 12 minutes.

Meanwhile, dice your Roma tomatoes, remember to take out the center seed section while you are dicing them. Put the tomatoes and broccoli in your serving dish with the lemon zest and lemon juice. Drain your cooked pasta and pour over the broccoli and pasta. Toss well. Pour olive oil over all the pasta and toss well again. Season to taste, sprinkle with the parmesan cheese and serve.


The recipe is easily doubled and is a great left over!

I absolutely adore http://www.picnik.com/! I love taking pictures but I'm not the best at it, which has never really stopped me in the past. Especially after I found this great program that helps edit my photos.


Picnik is an on-line editing service that makes your pictures look even better. You upload your photo and the creativity starts from there. It is extremely user friendly and packed full of options. So much fun, just make sure you have plenty of time before you start because it can become addictive.


Well here we go!


I have considered starting a blog for several years now but just never was able to muster up enough nerve. Then I started reading some of my friends' blogs and figured what the heck might as well give it a try, so here it is -
